Fried Chicken w/ Roasted Potatoes and Pan-Seared Zucchini

Ingredients:

3 Tbsp Mustache Ride

6 Drumsticks

2 Cups Buttermilk

3 Cups All-Purpose Flour

1 Cup Potato Starch

½ Pound Baby Red Potatoes

1 Zucchini

6-8 Cups Peanut Oil (Depending on the size of pan)

4 Tbsp Olive Oil

Salt to Taste

½ lemon (optional)

Fresh Thyme Leaves (optional)


Directions:

  1. Season drumsticks on both sides with desired amount of salt and 1 Tbsp of Mustache Ride

  2. Add to bowl with 2 cups of buttermilk, cover and set in fridge for at least 2 hours

  3. When drumsticks are almost done with their buttermilk bath, preheat oven to 400 degrees and start preparing the veggies

  4. Cut the potatoes into quarters and mix with 2 Tbsp olive oil, 2 large pinches of salt, 1 Tbsp Mustache Ride, and set onto a baking sheet

  5. Slice the Zucchini at an angle and mix with 1 Tbsp olive oil, 1 large pinch of salt, 1 Tbsp Mustache Ride, and set aside

  6. Prepare the dry batter with 3 cups of all-purpose flour, 1 cup potato starch, 1-2 pinches of salt, 1 Tbsp of Mustache Ride. Mix well

  7. Bring peanut oil temperature up to 300 degrees

  8. Once you’re ready to fry the chicken, put the potatoes in the oven and let bake for 20 minutes

  9. Take drumstick from buttermilk bath, set into flour mixture and cover completely. Make sure the flour is sticking to all surfaces of the drumstick. Give it a quick shake and place into peanut oil. Let fry for 10 minutes at the 300 degree temperature. Repeat this process for each drumstick. Try to do this in batches so as to not overcrowd the pan

  10. Once all drumsticks have been fried for 10 minutes at 300 degrees, pull them out and set aside. The potatoes should be done at this time too (if you fried the chicken in two batches) and can be pulled from the oven

  11. Increase peanut oil temperature to 350 degrees. Add the drumsticks back in and fry for another 3 minutes. Pull the chicken back out and garnish with half of a lemon juice and thyme (both optional). Let rest.

  12. Bring a pan to medium-high heat and add 1 Tbsp of olive oil. Once oil is shimmering, add your zucchini. Let the zucchini fry on pan for about 3-5 minutes on each side, until it’s cooked through with a nice crust

  13. Plate your dish and enjoy!
