Easy Weekday Meal - Pulled Chicken w/ Rice, Sautéed Peppers and Onions, and Broccolini

Ingredients:

5 Boneless/Skinless Chicken Thighs

1 Cup of Basmati Rice

2 Bunches of Broccolini

1 Sweet Onion

1 Red Bell Pepper

3 cloves of garlic

3 Tbsp of Mustache Ride

4 Tbsp (high smoke point) Olive Oil or Avocado Oil

¼ Cup of Water

Salt to Taste


Directions:

  1. Preheat oven to 400 degrees fahrenheit

  2. Rinse rice and follow the instructions on the rice package. Start cooking immediately

  3. Set chicken on an oven safe pan, coat all pieces of chicken with your choice of oil (olive or avocado oil recommended), with about one tablespoon of Mustache Ride, evenly season all chicken thighs and add about a teaspoon of salt to each thigh. Let sit while we prepare the veggies

  4. Chop the stems off of the broccolini and set aside

  5. Slice the onion and bell pepper along the grain and set aside

  6. Mince the garlic and set aside

  7. Heat a medium skillet over medium heat, add about a tablespoon of oil along with the peppers and onions, season with salt and pepper. Cook for 20 minutes or until fully tender, sticky and sweet, stirring occasionally to avoid burning

  8. Once onions are sweating and translucent, place chicken in the oven for 20 minutes

  9. Once chicken is done, set aside and let rest for about 5 minutes. The peppers and onions should be done at this time too, if they are, take off of pan and set aside. If not continue to cook.

  10. While the chicken is resting, heat a medium skillet over medium-high heat. Once pan is hot, add 1 to 2 tablespoons of oil along with broccolini. Stir until broccolini is fully coated with oil. Add garlic, 1 tablespoon of Mustache Ride, and salt to taste, stir until garlic is fragrant. Add ¼ cup of water to pan and cover for 2-3 minutes.

  11. While broccolini is steaming start pulling apart the chicken one thigh at a time with two forks

  12. After broccolini is done steaming (2-3 minutes) uncover the pan to let the rest of the water evaporate. Continue to cook while stirring occasionally to avoid burning. Continue to pull chicken during this time.

  13. Take broccolini off of heat after water has fully evaporated and broccolini is tender

  14. Add the chicken to a skillet on high heat with oil, stir continuously. Add 1 tablespoon of Mustache Ride and continue to stir until chicken is completely covered. Take off of heat after about 1 minute of high heat cooking.

  15. Plate, serve, and enjoy!
