Carne Asada Tacos

Prep Time: 3 Hours | Cook Time: 30 Minutes | Total Time: 3 Hours 30 Minutes

Feeds 4-6


Ingredients:

3 Lbs. Skirt or Flap Steak

1 ½ Tbsp. of Mustache Ride

12 Tortillas (for 4 people, preferably uncooked if you can find or make them)

2 Cups of Soy Sauce

1 Cup of Olive Oil

2 Cups of Apple Cider Vinegar

2 Cups of Water

½ of a Sweet Onion

1 Red Onion

2 Oranges

2 Limes

5 Cloves of Garlic

1 Bunch of Cilantro

1 Cup of Shredded Manchego Cheese

2 tsp. of Granulated Sugar

Salt to Taste


Directions:


Marinade:

  1. Finely chop sweet onion, garlic cloves, ½ of the bunch of cilantro, and squeeze the juice from the oranges and limes into a large bowl.

  2. In that same large bowl with the orange and lime juice, combine soy sauce, olive oil, sweet onion, garlic, cilantro, and Mustache Ride. Mix well and add in all of the steak.

  3. Make sure to mix the steak around to ensure all sides are covered and submerged. Cover and set in the refrigerator for 2 ½ hours.

Pickled Onions:

  1. Slice entire red onion along the grain into very thin slices. The thinner the better. Use a mandolin if you have one. Place into a jar.

  2. Combine water and apple cider vinegar in a medium pot. Add sugar and a couple of pinches of salt. Bring to a boil then reduce to a simmer until salt and sugar has dissolved.

  3. Add vinegar mixture to the onion jar. Seal and let sit for at least 6 hours (overnight for best results).

Tortillas:

  1. Whether you have cooked or uncooked tortillas, heat up in a pan until cooked through (use oil if preferred but it’s optional).

  2. Place each tortilla in a towel inside of a large pot and cover to let the tortillas steam.

Steak:

  1. Once the steak has been marinating for at least 2 ½ hours, place onto a grill or cast iron skillet. Turn only once and cook until steak reaches internal temperature of 130 degrees fahrenheit. Let it rest for 5 minutes before slicing.

  2. Slice into cubes, place on tortilla, and top with shredded cheese, pickled onions, and chopped cilantro

  3. Plate and ENJOY!
