Breakfast Potatoes w/ Eggs and Sausage

Ingredients:
1.5 lbs. of Baby Yukon Gold Potatoes
8 oz. of Breakfast Sausage
4 Eggs (Sunny Side Up)
0.5 of a Medium Sweet Onion
5 Tbsp. of Unsalted Butter
4 Cloves of Garlic (Smashed)
2 Sprigs of Rosemary (interchangeable with Thyme)
1 Finger-Width Bunch of Chives
3 Tbsp. of Mustache Ride
Preferred Salt to Taste
Directions:
- Preheat oven to 350 degrees
- Cut potatoes into roughly 1 inch slices, dice onions into small squares, smash all the garlic cloves, and finely chop the chives
- Heat a large non-stick skillet over medium heat and add sausage for browning, be sure not to cook all the way through. Once sausage is browned, set aside on a plate or bowl
- Heat 4 Tbsp. of butter in that same skillet. Once the butter has fully melted, add the garlic and rosemary and stir until they become aromatic. About 1 minute
- Add all of the potatoes and onions and stir to get them fully coated in the butter. Once fully coated, cover it up for 10 minutes stirring occasionally to avoid the potatoes sticking to the bottom of the pan and potentially burning
- After 10 minutes of cooking under the lid, remove lid and add the 3 Tablespoons of Mustache Ride and two large pinches of salt. Mix this around until Mustache Ride fully coats all of the ingredients in the pan. Cover it up again and continue to cook for another 10 minutes, stirring occasionally
- After 20 minutes, check on the potatoes and onions. The onions should basically be caramelized and the potatoes should be tender. Test with a fork. If the fork easily goes through the potato, they're ready. If not, keep cooking in the pan until they are
- Once potatoes and onions are ready, add the browned sausage to the pan, mix around to distribute the sausage evenly before transferring all the ingredients to an oven safe skillet. Once transferred, put the skillet into the over at 350 degrees for 30 minutes. Check occasionally for it's progress to make sure it's not burning or cooking too slow, as some ovens vary
- Once the potatoes are extra tender, pull them from the oven and set down while you cook the eggs
- Melt 1 Tbsp. of butter into the first pan and add 4 eggs. Once eggs have been added, sprinkle a small pinch of salt on each one along with a nice even coat of Mustache Ride. Cover and cook until the egg whites are cooked through with the yolk still being nice and runny.
- Place the eggs on top of the potato skillet and sprinkle the chive on for garnish
- Spoon the potatoes and eggs onto a plate and enjoy!
